Once the grape is harvested, which happens about mid-September, the must is separated from the skin with soft pressing. Once obtained the still wine, it rests in steel tanks. After some months, fermentation is performed in an autoclave, which is the Charmat method. This second fermentation allows you to get an extra dry sparkling wine of excellent quality with hints of flowers and fruits. It is a wine with good acidity and brilliant freshness that is meant to be drunk young and fresh.


Organoleptic characteristics:
COLOUR: Pale straw yellow with green tints.
BOUQUET: Fruity with hints of golden apple, acacia flowers and wisteria, sometimes of wildflowers, and wild mountain honey.
TASTE: Slender, with light acidity pleasantly lively, fresh, tasty.

VINIFICATION:
Soft pressing of the grapes and fermentation in stainless steel tanks at a controlled temperature of 18 ° C. After a break of several months following the sparkling steel autoclave with Charmat.
