Description
The origin is very uncertain, the varietal probably derives from a municipality called Prosecco in Friuli Venezia Giulia, but nowadays it is especially prevalent in the Veneto region and principally in the province of Treviso, in particular in the hills of Conegliano and Valdobbiadene. The harvest usually takes place from the second to the third week of September. The grapes are harvested and vinified according to the characteristic white wine production with soft pressing and temperature-controlled fermentation. Afterwards the wine is effervesced in the autoclave, in order to obtain a sparkling wine with hints of fruits and flowers and a good acidity.

VINIFICATION:
Soft pressing of the grapes and fermentation in stainless steel tanks at a controlled temperature of 18 ° C. After a break of several months following the re-fermentation in stainless steel autoclave with Charmat method and bottling.

Particularly suitable as aperitif, but can also be combined with roasted fish and fresh desserts like sorbets
