Grape variety with high international spread, a native of the South-West of France. In Italy its cultivation isn’t widespread, although it is on the rise, first in a limited form in the provinces of Brescia and Frosinone, then in many growing areas dedicated to the production of red wines of Bordeaux. The grapes are harvested in late September, early October. The vinification is done with the classic maceration in order to give the wine an intense red color. The result is a tannic wine with distinct acid and characteristic hints of pepper and herbs. For making it more balanced it undergoes malolactic fermentation before bottling. Our Cabernet Franc is supposed to be drunk young.

Vinified in stainless steel with maceration on the skins for about ten days at a temperature of 22° – 26 °C. Once fermentation is completed, maturation in stainless steel before bottling.
